Here is a delicious way to add more valuable fiber into our daily diets while also satisfying the sweet tooth!

 
Chocolate Chip Cookies
 
You can substitute 1/2 of the butter, oil, crisco with pureed white beans in a lot of recipes- it does make cookies a bit "cake-ier" and use pureed black beans in brownies so you can't see them (gives brownies a different texture...still good though) . You just open a can, rinse well and puree. I use my magic bullet, my blender just shoots them everywhere.
Bean Cookies
half of 3/4 c. crisco ( like butter flavor)
scant 1/2 c. of pureed white beans
1 1/2 t. vanilla-use the real stuff to help the flavor!
1 egg
1 3/4 c. flour
3/4 t. salt
3/4 t. baking soda
1 c chocolate chips
Cream crisco, beans and vanilla. Add egg and blend til creamy. Combine flour, salt, and soda. Add to creamed mixture gradually. Stir in chocolate chips. Put on cookie sheet and slight press down, or they will cook like little balls. Bake at 350-375 for 9-10 minutes.


Bean Brownies
1 can black beans (Rinse, then I put them in my magic bullet and add water to the level of the beans, puree- a lot, until they are completely smooth, about 30-45 seconds)
3-4 T. oil
1 brownie mix
Mix together and bake as usual.
